Front-of-house gypsum is selected around appearance, architectural features and customer traffic, while back-of-house walls can encounter steam, cleaning moisture and repeated service activity. Mapping these zones before material selection prevents specialty panels from being used indiscriminately while ensuring higher-exposure areas receive suitable substrates.
Kitchen walls are positioned around preparation zones, storage rooms, dishwashing areas and service circulation shown on the restaurant plan. Steel-stud layouts account for door openings, pass-throughs and wall-mounted components before gypsum installation. This dimensional planning becomes particularly important where materials of different thicknesses meet along long customer-visible walls, because even small offsets can remain noticeable under restaurant lighting.

Commercial kitchens can concentrate exhaust ducts, make-up-air components and ventilation penetrations above food-preparation areas. Drywall framing and gypsum are laid out around these openings before enclosure so required clearances and service access are not improvised after the wall is finished. Where a penetration passes through a specified wall assembly, its surrounding detail must remain compatible with that construction rather than simply filling oversized gaps with joint compound.
Stainless-steel wall panels and backsplashes can terminate against gypsum at preparation counters, service areas and other kitchen boundaries. Drywall framing establishes a flat substrate and straight transition line so fabricated stainless components fit the dimensions for which they were manufactured. Because sheet-metal finishes reveal uneven backing readily, correcting framing irregularities before boarding produces a more consistent interface than attempting to compensate with adhesive thickness.
Water lines, drain connections, electrical conduit and other utilities can create numerous penetrations through kitchen partitions. Openings are cut closely around service locations and coordinated before wall finishes are installed, avoiding oversized cut-outs that complicate subsequent sanitation detailing. FRP does not necessarily cover every wall from floor to ceiling, creating transition lines where washable panels meet painted gypsum or another finish. Termination mouldings, inside corners and panel edges require a straight, stable substrate so the protective surface can be detailed without irregular gaps. Planning these junctions at the drywall stage creates cleaner sanitation interfaces and avoids relying on excessive sealant to compensate for inaccurate wall geometry.
It depends on the location, exposure and FRP manufacturer's approved substrate requirements. FRP does not automatically make ordinary gypsum suitable for a moisture-prone area simply because it covers the board. The underlying panel must remain appropriate for the environmental conditions, while the substrate also needs sufficient flatness and surface preparation for the specified adhesive system.
They address different conditions. Moisture-resistant panels are engineered for greater resistance to humidity and intermittent moisture, while abuse-resistant gypsum is designed to withstand greater surface indentation and impact. A busy service corridor may benefit from impact performance, whereas a humidity-prone service area presents a different material-selection problem. One designation should not automatically be substituted for the other.
ASTM C1629 classifies abuse-resistant nondecorated interior gypsum panel products using tests for surface abrasion, indentation, soft-body impact and hard-body impact. Products can receive Level 1, 2 or 3 classifications for individual performance categories, with Level 3 representing the highest classification. This provides a measurable way to compare panels for restaurant locations exposed to carts and repeated physical contact.
Not automatically. Walls around cooking equipment can be subject to heat, grease, cleaning and other conditions beyond those encountered by ordinary gypsum finishes. The specified wall construction, clearances and protective surface must correspond with the restaurant design and applicable requirements. Drywall should not be treated as a substitute for a required non-combustible or sanitary protective finish.
Banquettes, counters, cabinets and fabricated wall panels are often manufactured to predetermined dimensions. If the completed drywall plane differs from the dimensions used for fabrication, gaps or field modifications can result. Establishing stud location, gypsum thickness and adjoining finish build-up first gives millwork fabricators reliable finished dimensions from which to measure.
